My wife’s away……experimenting in the kitchen

My wife was working last night so I decided to try to make my favorite meal – Chicken Stir Fry. This absolutely is a meal that can be made from your food stores if the right items are put back. This meal provides lots of flavor and nutrition as well.

Here are the ingredients:

  • chicken
  • yellow squash
  • zucchini
  • onions
  • rice
  • mushrooms
  • corn
  • salt/pepper
  • Soy Sauce

To make my masterpiece I use a large frying pan (sprayed with PAM) and add whatever portion amount desired of each ingredient. Want more meat? Just add more chicken. Only want a little squash – just slice up a small one. Pretty simple and totally customizable. As everything cooks I stir often to try to provide for even cooking throughout.

I boiled the rice for a bit to make sure it gets fully cooked. Nothing worse than eating a great dish only to find rock hard rice in it.
