Finally…….pickles!!!

A couple days ago my wife and I made our first venture into canning.  With so many fresh cucumbers from our garden – we decided to try to pickle some.

I bought some 1 pint jars and some pickling pre-mix. Following the instructions on the package we prepared the solution, the cucumbers, and the jars. Overall it was very easy – of course using the pre-mix made things much easier than going from scratch.

One concern I have is how the pickles will store long term. I did not add anything to keep the pickles crispy and crunchy. From what I have read online many people add ingredients to the jars to keep the pickles crisp. I will try some probably in a month or so and see how they turned out. I dated the jars to track how old they are.

    Kudos for canning!! Probably the top 2 reasons pickles will get soggy is: (1) overcooking the cucumber during the process and (2) exposing more inner cucumber with spears as opposed to slices. And naturally, thicker slices will be crisper than thinly sliced cucs. Hope that helps!

    Most of my pickling cucumbers were on the thick side – so hopefully they will turn out good.

    I think this is one of the healthiest vegetables. It always helps satisfies my hunger and doesn’t have much calories versus the amount.
