    We have canned potatos and they work great with our canned carrots when we use the crockpot to make a stew.

    Canning potatos also makes sense since we can’t eat a 50 pound box of potato’s before they go soft and start sprouting. So about half gets canned and the rest is eaten over the course of a month or so.

    The plus side is that they keep a long time without the risk of going bad – so it save money. Though a 50 pound box is usually under $15 – one of the benefits of living in Idaho.
